PORK  INDIYAL




Vindaloo or Indiyal as we popularly call it it is a hot favorite is in every East Indian catholics and goan catholics households though our reciepe differs completely from the goans , No feast or wedding is complete without Indiyal  for us East Indian fugias and vindaloo is like a match made in heaven


Take a pork meatcut into large pieces adding sufficient salt then add garlic and ground red chillies and keep it thus for 24 hrs , at the end of this period place in cold water and keep it there for another 2 hours after removing it from the water rinse well then grind the following spices then apply to the meat and place it in an earthen vessel containing sufficient vinegar . a wine glass  of rum or brandy may also be added which preserves this pork indiyal for a long period of time when it it to be served cook and heat some pieces of meat on very low heat with little of its gravy
