ELIJAM COCONUT PANCAKES
Pancakes are traditionally made by Catholics
on Shrove Tuesday a day before Ash Wednesday , which is the first day of Lent ,Here
in India we make Elijam Coconut Pancakes even on Normal days , we don’t have to
wait for Pancakes Tuesday , We have it anytime of the year .
The East Indians Elijam fillings is
made of Freshly Scrapped Coconut and Sugar and adding some Dried fruits and Nuts while the Goans use jaggery in
their pancakes, The Pancake is made out
of Colourful Batters by using Edible Food Colours some of them keep it plain
and simple Vise Versa , Flour, Eggs
and Water are the key ingredients to
make thin flowing batter these colourful batters are poured by ladle on a
frying pan to make pancakes , These are later stuffed with Coconut and dry
fruits filling rolled and served while they are super soft .
